For a long time--I'm talking years and years--we made a new granola every few months to feature in our restaurant's granola and yogurt bowl.  After a while, customers started asking when this one would be back.  We got the hint and decided to make it our year-round blend.  Now, we sell it by the pound and can't keep up with production.  
 
In my opinion, it's near perfect.  Thanks to the olive oil and maple syrup, it has a tender crispness that shatters easily, but holds its own in a bowl of yogurt.  We're probably more heavy-handed with salt than most granola makers, which is probably why this one is so popular.  It's sweet and salty, kid-friendly, but interesting, and tastes good with any fruit you throw at, throughout the entire year.
